{HISTORY}

Full of authentic recipes from the beautiful country of Denmark, Ingeborg Dahl Jensen (1892-1986) published Wonderful Wonderful Danish Cooking in 1965, in response to enthusiasm for family recipes prepared for her American friends.

Ingeborg immigrated to Iowa, but never forgot her  Danish childhood culinary training and influences when it came to cooking and baking. Broken down into two sections, the first half of this cookbook is all about baking the breads and pastries Denmark is so well known for. The second half features family-style meals, and smorrebrod recipes - Denmark's famous open-faced sandwich combinations.

The opening of most chapters includes cultural references or cooking stories about Denmark giving fun context to each section and a broad understanding of the Danish food landscape. Also, each recipe is titled both in English and Danish, so you can learn a little bit of the language as you cook your way through the country.

A delight in American home kitchens, Ingeborg's recipes continue to inspire contemporary cooks today and have been written about and referenced for decades well beyond her 1965 debut.

Many famous traditional Danish favorites can be found here including recipes for Danish pastries, sandwiches, pickled herring, eel, and a variety of fruit soups often enjoyed during dessert. Other interesting recipes include Frozen Whipped Cream, Orange Soup, Wedding Punch, Sour Cream Coffee Roles, Cinnamon Bread, Sweet Saffron Bread, Salty Rye Rolls, Wine Puffs, Squash with Cinnamon, Danish Pancakes, Molasses Pudding, Danish Dumplings, and Jelly Fritters along with several very old antique heritage recipes including a 300-year-old Syllabub recipe and a 100-year-old brandy cake recipe.

In lovely vintage condition. This cookbook is very clean inside and out. There are no cooking, spots, stains or notations. The spine is tight and all pages are intact.
