She was concerned about the environment, pesticides, the treatment of animals, and the footprint stress that a meat-filled diet made on the planet. She also wanted to dispel the myth that a vegetarian diet equaled a boring diet. Here she proves that you don't have to sacrifice gourmet cooking (and eating!) experiences when it comes to choosing a vegetarian diet. Being vegetarian is not all raw vegetables, hard-to-find grains, and unsatisfying cooking tasks.
