The Thousand Recipe Chinese Cookbook - Gloria Bley Miller - 1983 Printing
A magnificent tome...full of surprises, delights and good sense... also quite the book for Chinese-Americans who would like to go back to the culinary art of their ancestry to recreate the menus their parents neglected to pass on to them." - William Yukon Chang, on review of The Thousand Recipe Chinese Cookbook
{HISTORY}
If ever there was a cookbook that contained the complete instruction manual on everything related to Chinese cooking, then this would surely be it. First published in 1966 by writer, traveler and intrepid eater Gloria Bley Miller (1921-2008), The Thousand Recipe Cookbook is her passionate homage to a cuisine that has inspired, encouraged, challenged and amazed her throughout her entire life. Now considered the bible of Chinese cooking, it includes not only 1000 recipes but also detailed information on cooking utensils, menu planning, wine pairings, ingredient translations, substitutions, market shopping, and storage and serving suggestions. So weighted in knowledge and practical information, it has been lauded by both novice and professional chefs the world-over for decades. A resident of New York's West Village and a constant shopper in Chinatown, Gloria Bley Miller's book about Chinese cooking is authentic, comprehensive and interesting.
