Isn't that quote above a great way to start the introduction to a cookbook? This one, as Laurel so simply states, is a book of recipes made for humans and their health and their desire to eat something delicious.

Published during a fast-paced time in history where excess, professional ambition, and consumer demand were the buzzwords of the decade and fancy food, intricate recipes, and nouveau cuisine topped the list of culinary delights, Laurel and her team stepped onto the cookbook scene with a different approach.

In the intro, Laurel will be the first to tell you right off the bat that some recipes in this book take longer than others to prepare,  but ultimately, it's not the length of time that matters, but the pace and appreciation in which you do it that matters.

This cookbook is a gentle reminder to enjoy the cooking process and to be thankful for the ingredients that were slowly made by nature. 

First published in 1976, Laurel's Kitchen, written by Laurel Robertson, Carol Flinders, and Bronwen Godfrey became a runaway hit with health-conscious home cooks of the late 20th century.  A complete vegetarian cookbook, its mission was to not only provide healthy meat-free recipes but also to share important nutrition information so that plant-based eaters could make the healthiest decisions possible when it came to foods they consumed.

Revised and updated to celebrate its 10th anniversary, The New Laurel's Kitchen was published in 1986 and included among the beloved favorites a new batch of recipes to supplement the originals, updated nutrition information, and the latest health-conscious information available with a bevy of easy to understand charts, guides, and tips. 

Selling over a million copies, critics have praised both books for paving the way to more mindful eating. But of the two, this version -  New Laurel's Kitchen is recommended most often for home cooks just starting out on a vegetarian path thanks to its friendly approach and un-intimidating ease of use.

Laurel herself, a co-author and food columnist,  knew that it could be a bit overwhelming when it came to digesting (pun intended!) a new way of eating - particularly when it came to following a plant-based diet.
