... it grew out of the sea...

{HISTORY}

Spanning 350 years of regional cooking, The Mystic Seaport Cookbook is packed full of heritage recipes that have been passed down for generations dating all the way back to its earliest settlers. A conglomeration of meals brought by boat from aboard, shared by local indigenous tribes, and curated by the sea, the epicurean diet of Mystic residents and restaurants is both fascinating and fastidious.

In this cookbook, first published in 1970, food writer and Connecticut resident Lilian Langseth-Christensen sets out to highlight a collection of recipes that makes this strip of the New England coastline unique against all others.

Woven throughout each chapter and almost every recipe is the presence of the sea... the language of it, the influence of it, and the people who lived on or around it. Lillian shares all sorts of interesting historical information that sets the time, place, and tone for each recipe, from snippets of stories about early settlers even up to modern (1970s) references which keeps the contents of this book fresh and engaging throughout. Whether you are tackling a meal or two or just understanding more about the food and fare of this bustling New England port, by book's end you'll have fully immersed your brain and belly in the flagship foods of the Connecticut coastline.

Interesting recipes include Roast Christmas Goose, Old English Fish Cakes, Griddle Scones, Burnt Sugar Pancakes, Plymouth Succotash, Samp Porridge, Green-Tomato Casserole, Finnish Stew, Huckleberry Deep-dish Pie, Cape Cod Pudding, Very Superior Whipped Syllabub, Red Flannel Hash, Stuffed Quahogs and Baked Filet Sandwiches.

Also, to make this cookbook as accessible as possible - all recipes have been converted to modern cooking methods and measures.
