Now considered a kitchen classic, The Cuisine of Hungary is a cookbook, a historical reference, a culture guide and an art book all wrapped in one. Written by George Lang (1924-2011), one of the hospitality industry's most respected restauranteurs, this deep dive into Hungarian cuisine gives readers a full understanding of this amazing country's culinary landscape.

Immigrating from Hungary to the US in the 1940s, George Lang escaped from a concentration camp and the grip of Nazi terrorism to start a new life in the hospitality industry in New York City. Involved with a number of famous restaurants including the Four Seasons, the Waldorf Astoria and Cafe des Artistes, George made a name for himself as a creative restauranteur and party planner of unique dining experiences. Passionate about his Hungarian culture, despite the traumatic events that forced him to leave,  George never forgot about the rich tapestry of foods and flavors that made up his ancestral homeland.

In 1971, George published this cookbook, a love letter to his country in all its complicated, diverse, and dynamic gastronomical forms. To experience The Cuisine of Hungary is to not only cook some authentic dishes but also to ingest the history of why the recipes come together as they do. Included among its pages are poems, quotes, art and stories illustrating how Hungarians ate, drank, and enjoyed the flavors of their country. This cookbook is a real tour de force of a dining experience!

Personal touches to this cookbook from a previous owner include favorite recipe pages that have been paper-clipped so as not to lose sight of them. Sections are dog-earred for reference. And a hand-written recipe is tucked inside the chapter on hot noodle desserts. We just love when cookbooks are enhanced in such a wonderful way.

In lovely vintage condition. The dust jacket bears a small chippy spot and a wrinkled are on the top edge but otherwise is completely intact. The interior pages are clean and bright. Please see personalization notes above and in photos.
