The Complete Book of Outdoor Cookery by Helen Evans Brown and James Beard - 1955 Book Club Edition
It is our aim to introduce more of you to the thrill of the grill... (from the Introduction)
{HISTORY}
What happens when two glittering stars of the culinary industry get together to write a cookbook? Magic occurs! In this 1955 Book Club edition of The Complete Book of Outdoor Cookery, best friends James Beard and Helen Evans Brown dive into the concept of cooking outdoors over open flames and fire.
In the 1950s, this was new territory to conquer in the cooking world, and James and Helen tackle it all angles. From cooking on a small hibachi to a big grill, from cooking in the fireplace to cooking in an open pit, from rotisserie-style spits to campfire-style sticks and everything in between, J & H set grill masters up for success with their unique blend of recipes that are simple yet sophisticated in palette and presentation.
Covering over 250 pages of recipes ideal for grilling and accompaniments, the recipes were inspired by their local cuisine (Helen on the West Coast, James on the East Coast), their travels around the world, and the interesting variety of people they met during their career. Recipe titles may seem simple - Roast Beef Sandwich, Spit Lobsters, Lamb Steaks, Ham Steaks, Roast Chicken, etc. but don't be dissuaded, each recipe offers ingredients that bring out the best flavors whether it s a simple everyday ingrediant pairing or an elevated food companion.
Fun highlights also include chapters on how how to build your own outdoor grill, charts with cooking times and temps for all grilled meats, pages of suggested menus and helpful notes on how to take your feasts on the road whether you are cooking on a boat, in a travel trailer, or at a campsite.
Still considered one of the best cookbooks on outdoor dining ever published, this collection of recipes has been a beloved classic for over seventy years and continues to inspire new cooks today.
