The recipes in this book are authentic; that is they are presented as they are prepared in the countries of their origin. Everything here has been tested with standard kitchen equipment and I have deliberately left out recipes that call for special pots and pans which are hard to get. These are recipes that are most representative of the five countries that make up the Scandinavian region, and I hope that they will have special appeal to Americans - introducing them to the delightful element of discovery that makes cooking fun.
