{HISTORY}

Known by his poetry as an explorer, a thinker, an observer, it's no wonder than Ronald Johnson was also a lover of cooking. He grew up in Kansas but lived for many years in San Francisco, spending just as much time on his acclaimed poetry career as he did catering and cooking. 

In addition to numerous volumes of poetry, he published five cookbooks throughout his life. This one, The Aficionado's Southwestern Cooking was published in 1968. It features a combination of recipes originating from Mexico, Spain, Arizona and New Mexico that makes up the true regional cuisine known as Southwestern fare. The recipes featured here are fascinating - full of favorites that we already know - enchiladas, quesadilla, tacos, salsa, guacamole etc., but also a plethora of interesting flavors and ingredient combinations that are not as expected when you think of Southwestern food. Recipes like Chicken with Pumpkinseed Sauce, Candied Limes, Avocado Ice Cream, Pork Loin Baked with Oranges, Trout Frosted with Guacamole, Mango Floating Islands, Squash Pancakes with Blossoms,  all delight the imagination and hint at delicious meals to come. 

The Aficionado's Southwestern Cooking cookbook was designated as the first comprehensive cookbook of Mexican food as prepared in the Southwestern United States.
