And so begins, Juliette Elkon's fascinating cookbook devoted entirely to honey and the wide array of dishes we can create from it. The first cookbook ever published showcasing this sweet ingredient, The Honey Cookbook debuted in 1955 and was intended to shed light on a more natural, healthful approach to sweetening food in place of highly manufactured sugar. 

What is really lovely about this cookbook is its vast array of different types of recipes - from international favorites to traditional holiday treats to simple dishes touched with a bit of sweetness. A chapter on the science of honey breaks its composition down into chemical forms and an introduction shares a quick history of honey as a food source tracing it all the way back to the AD times. Fun facts about honey are also included throughout giving readers a full understanding of this ingredient from all angles. 

Juliette, who wrote numerous midcentury cookbooks, shares several recipes for this book from her own Belgian upbringing including Belgian Bernardins cookies and Belgian Couque de Dinent cakes. Other interesting recipes include Russian Honey Beet Jam, Sweet and Sour Chinese Meat Balls, Pickled Salmon, Norwegian Pancakes, Old-Fashioned Honey Pie, Oats and Honey Rolls, Lemon Honey Jelly, Honeyed Figs, Pumpkin Custard, Honey Bran Bread, and Cereal Croquettes. 

In addition to being a talented cook, Juliette was also a fiber artist specializing in embroidery. Affiliated with numerous international organizations, she taught embroidery art in Haiti. Her personal papers are held in the archives of the Smithsonian Museum of American Art.

In lovely vintage condition. The coverboards contain rub marks along the top and bottom edges. There is some light foxing on the endpapers. The interior is clean and bright with no spots or stains. The spine is tight and all pages are intact.
