A true adventurer both in cooking and travel, Carol Cutler is a talented cookbook author and art critic as well as the wife of well-known journalist Bernard "BJ" Cutler. During the mid-20th century, BJ's career took them overseas to Paris and Moscow for over a dozen years, where they explored their interests in food, wine and politics affecting their adopted " home" cities. Carol took cooking classes with Julia Child at her L'Ecole des Trois Gourmandes days and the two grew so friendly they'd often dine together along with their husbands at cafes and bistros around Paris.
In addition to cooking with Julia, Carol also attended the Cordon Bleu Cooking School. That experience combined with Julia's lessons gave Carol all the culinary instruction she needed to adapt her French kitchen skills to an American cookbook filled with heart-healthy recipes.
First published in 1973, Haute Cuisine for your Heart's Delight was inspired out of necessity after her husband suffered a heart attack and Carol wanted to feed him in the usual gourmet style they were used to, yet also keep his cholesterol in check. By modifying more traditional French foods traditionally made with lots of butter and cream and by incorporating Mediterranean-style recipes, Carol created a lovely cookbook full of low-calorie/low-cholesterol meals that are elegant, interesting, and beautifully presented.
Each recipe contains cholesterol ratings and calories per serving, so home cooks can reliably plan meals according to their nutritional content. Extra features include a yes/no list of appropriate heart-healthy foods, suggested menus, and an extensive desserts chapter.
