Vintage 1970s Organic Food Preservation Book - Stocking Up by the Editors of Organic Gardening & Farming - 1975 Edition 10th Printing
...this book is designed to be a complete guide for organic gardeners, homesteaders, and family farmers who know the satisfaction of raising and preserving their own food as naturally as possible... (from the Introduction)
{HISTORY}
First published in 1973, Stocking Up was one of the most comprehensive books of the late 20th century when it came to the subject of food preservation. Written by the editors of Organic Gardening and Farming magazine it covers every aspect of garden to cupboard food storage for year-round health and enjoyment from seed gathering to smoking meats to building root cellars and underground storage facilities.
Highlighting step-by-step processes of canning and preserving a wealth of garden vegetables, fruits, dairy, and meat products, this book tackles all the practical information you would need to know to create your own successful and sustainable food supply system. Focusing on natural, organic garden practices the goal of this book was to eliminate the use of chemicals or unnatural preservatives from shelf-stable food products and to retain all the healthy vitamins and nutrients of garden-grown food harvested at peak time.
Fascinating in scope and detail, no stone has been left unturned in the quest for perfectly preserved food. Dry storage, freezing, canning, salting and smoking processes are all discussed. A bevy of charts and graphs illustrate what food can be preserved in what ways. Cut charts for various types of meat, dimensions for drying trays, an assortment of indoor and outdoor building projects for fruit/vegetable storage, how to choose the right containers to use for the right food, how to build a smokehouse (in a barrel, in a fridge, in a permanent, standalone structure) ... the list goes on and on about all that you will learn from this book.
Cheesemaking how-tos, butter-making techniques and an assortment of recipes for breads and canned foods turn this into a bit of a cookbook as well as a gardening book. Interesting recipes include Honey Chutney, Artichoke Pickles, Yogurt Cheese Cake, Carrot Coconut Salad, Nutty Rice Loaf, Cucumber Nuts and Olives, Chestnut Stuffing, Nutty Burgers and Cranberry and Pear Conserve.
A really helpful book for anyone interested in self-sustainability, organic gardening and waste-free living, this book helps extend the fruits of the gardening season for year-round enjoyment and nutrition.
