He also had a special affinity for soup making. Passing all he learned onto his son made Roy become a soup devotee himself. And as we all know, when such passions are unleashed on a cook and a book, a whirlwind adventure occurs.

Here in The Complete Soup Cookbook, Roy tackles this most comforting and cozy of meals from the bottom of the pot up. With an international focus on recipes from around the globe, Roy covers the careful process of building solid foundation stocks, the layering of ingredients, the slow simmer, the timely marriage of flavors, and the appropriate season in which to enjoy the finished extravaganza.

And to go a step further, he labeled each recipe with a four-dot system describing the consistency of each soup (light, medium light, medium heavy, heavy) and a star system describing the degrees of flavor (mild, medium, intense). These helpful guides were set in place so that cooks would learn not only the type of meal they were making, but also the appropriate course in which to serve it. There was nothing that upset Roy more than when someone passed on a soup course in order to "save room" for an entrée, especially when a menu was planned specifically so that both courses enhanced one another.

The Complete Soup Cookbook begins with a brief history of soup, which Roy calls "the cradle of cookery," and continues on to the ideal soup-maker's supply list (all standard, basic kitchen tools with the fanciest item being an apple corer) and includes a glossary of standard flavor enhancers (herbs, spices, cheeses, vinegars, oils, and fats).

As for recipes, all the familiar favorites are here from tomato to chicken noodle, gumbo to potato, clam chowder to cream of broccoli, along with a plethora of other interesting concoctions of international origin. Bolivian Festival Soup, Cream of Chestnut, Mexican Coconut, Chinese Egg and Bean-Curd, Finnish Seljanka, Mussel Soup with Cognac, African Peanut Butter Soup, Cockaleeky, Gazpacho, Honey and Lemon Soup, Mexican Sour-Cream, Cold Puree of Spinach Orientale, Hawaiian Pumpkin Pineapple Soup, Krupnik, California Olive Soup, and Cabbage and Cranberry Borscht are just a few examples of the global recipes that await.

For being the author of quite a few books throughout his writing career, many of them cookbooks including two on homemade dog and cat food, there is not much biography highlighting Roy's professional life. We do know that he taught cooking classes, wrote comic books, and ran a subscription recipe service as well as penned a syndicated monthly food column for midcentury newspapers titled The $2.00 Gourmet. But other than those details, Roy’s life remains a bit of a mystery. Except for one very sweet note at the end of his life. Buried next to his wife Evelyn in the Beth Moses Cemetery in West Babylon, New York, Roy’s headstone reads "Gone to join Mom in heaven and finally finish my work. I will continue to lead the happiness brigade and again have my legs to run and swim in the sunshine. Many, many years from now, when we are all together again, we can share all the memories of our lives in laughter and love and Mom’s soups. Love, Dad"

Whether Evelyn was a helper in the making of this cookbook or Roy was her teacher in the kitchen, we'll never know. But we think it is safe to say that when the subject of your cookbook makes it all the way to your headstone, that's how you know we are in good hands.

{SPECIAL FEATURES}

1969 edition

224 pages including detailed index

Includes original dust jacket

Rare book

{CONDITION}

In lovely vintage condition, this cookbook is clean and bright throughout except for a few cooking spots on pages 180-181 which feature recipes for Spanish Fish Soup, Cockaleeky, Gazpacho and Cocido Español. We always love to see these cooking stains when they comprise just one area of a cookbook. As is often the case, that was the favorite recipe of a previous owner and therefore well-loved and well-made. Like a little tap on your shoulder from a long ago, cook that's the recipe or the set of recipes you should try first.

The spine is tight, and all pages are intact. The last name of a previous owner appears on the front endpaper, written in pen. The dust jacket contains a bit of warbling to the paper and also contains some chippy areas along the top and bottom edge. To protect the dust jacket, it's been relined on the interior side with archival paper to keep its structural integrity intact. The blue and white coverboards are very clean and bright.

{SIZE}

Measures 9.25" inches (length) x 6.75" inches (width) x 1 inch (thickness) and weighs just under 1 lb.
