{HISTORY}

Long before Madhur Jaffrey became a culinary icon she was a wife and a mom and an actress living in New York City. A lusty sense of nostalgia and desire to share some of her heritage foods with her American friends led Madhur to communicate with her mom via letters about the recipes she missed most from her homeland of India. That 15-year communication via mail with her mom led to her first cookbook, An Invitation to Indian Cooking published in 1973. 

Next, she was off on a seven-year East Asian culinary adventure visiting Japan. Thailand, Indonesia, the Philippines, Korea, and her own homeland of India to collect and record authentic vegetarian recipes from those cultures. The result of all that travel was this cookbook published in 1981, Madhur Jaffrey's World of the East Vegetarian Cooking. By gathering all these traditional methods and techniques of other countries and cultures, Madhur took all she learned home to her small New York City kitchen, preparing them with American equipment and ingredients easily found in the markets or specialty shops of New York City.

It was Madhur's mission to make sure that these unique recipes from far-flung regions of the world would be easily accessible to all American home cooks, knowing the limitations they might experience in using foreign equipment or unfamiliar techniques. By highlighting recipes using an array of grains, vegetables, dairy products, herbs, and spices, Madhur across 400 pages, shares an array of meals from breakfast to dinner, including snacks for the kids and hors d'oeuvres for cocktail hour, using common ingredients in a variety of interesting ways. 

Broken down by ingredient family, a recipe from Thailand (Thai Fried Rice) sits next to a recipe from Iran (Sweet Rice with Orange Rind). Scrambled Eggs with Cabbage, a recipe from Japan, sits next to Scrambled Eggs with Spicy Tomatoes, a recipe from India. Mix and match menu suggestions blending together different recipes from different cuisines all served in one meal are also offered to further ignite creativity in the kitchen. Threaded throughout are stories along the way that Madhur shares about people and places she met along the way or friends she met in her city sojourns.  

This listing is for the 1989 edition, the seventh printing of  Madhur Jaffrey's World of the East Vegetarian Cooking. With its pretty cover and beautiful drawings throughout by Susan Gaber, it's a beauty of a book both in content and presentation.

An instant success from her very first cookbook, Madhur is now the author of over 30 cookbooks, she has received many awards for her culinary talents over the past five decades.
