The rich and varied culinary heritage of Italy has produced a vast collection of one-dish specialty meals. The recipes in this book are among the most representative of the various classic regional dishes of Italy. (from the Introduction)

{HISTORY}

In 1955, Angela Catanzaro rose to beloved cooking star status when she published Mama Mia: The Home Book of Italian Cooking which immediately became a bestseller and sold over 400,000 copies. In that cookbook, she brought the regional cuisine of Italy home to all kitchens around the world and made everyone's favorite ethnic food accessible to all. She followed up that great success with this innovative cookbook, Italian Casserole Cooking published in 1970. Focusing solely on Italian casserole style recipes ideal for buffets, parties, large family gatherings and mid-week meal planning Angela collected 150 authentic dishes that could feed a crowd, be prepared in less than an hour and combine simple ingredients for lasting impact.

The first cookbook to combine Italian food with casserole cooking, it contains an interesting array of recipes that run the gamut from the traditional (cannelloni, risotto, lasagna, pasta sauce, gnocchi, stuffed peppers) to the inspiring (stuffed meatloaf, homemade noodles, pork chop casserole, squash stew, semolina dumplings, etc). Unlike some mid-century cookbooks that incorporate convenience foods like frozen vegetables and canned goods, this one focuses on fresh ingredients and simple techniques. The only canned foods listed here are tomatoes, which are a staple during wintertime cooking. Get ready to make your own homemade tomato sauces, noodles and ravioli. Experiment with sausage, beef, fish, chicken and a plethora of vegetable laden side dishes. Learn about wine pairings, cheese varieties and the best used spices of an Italian kitchen, and learn how all these components make up a cozy casserole fit for a hungry crowd.
